BEETROOT AND ORANGE SOUP
 Main Ingredient

Beetroot

Serves 4


Ingredients

2 medium sized beetroot
2 large carrots
1 white onion
1 orange
1 1/2 litres vegetable Stock
1 tsp cumin seeds
Bunch of fresh coriander
1 tblsp of rice bran oil



If you preference is for a chunkier version of this soup just omit the blending step.
 Cooking Instructions

Finally chop onion while heating oil in a large saucepan.
Add cumin seeds to oil and stir fry for 2 minutes.
Then add white onion and sweat off to release flavour
until soft.
Next peel beetroot and carrots and grate,
add to onion and gently cook until soft (about 10 minutes).
Now add the zest of the orange plus the juice of 1/2 the orange.
Cook for a minute or two then add the vegetable stock and simmer
for 10 minutes.
Remove from the heat and blend until smooth with a stick
blender (or use a conventional blender).
Return soup to the heat and season with salt and pepper to
taste.

Serve in warmed bowls with a generous sprinkling of chopped
coriander. So pretty!

Serve with rye toast on the side.
